Recipe: Flour-Free Chocolate Chip Cookie - Even kids love!

I swear my kids devour this and I've brought it to office potlucks with rave reviews. So if you haven't checked out Chocolate Covered Katie recipes, start with this one!

There are many ways to sneak fun treats into our diet without crashing all of our hard work. And one is to replace refined flour with something more nourishing like oatmeal or even beans. This not only has you gluten-free, but adds protein, fiber and minerals to your treat.


Sounds crazy, but its totally viable, and actually delicious.


Ingredients

  • 2 cans white beans or garbanzos, drained and rinsed (500g total, once drained)

  • 1 cup quick oats or almond flour

  • 1/4 cup applesauce or yogurt

  • 3 tbsp oil or 1/4 cup nut butter

  • 2 tsp pure vanilla extract

  • 2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 1 cup brown sugar or unrefined sugar (click for a Sugar Free Cookie Pie)

  • 1 cup chocolate chips - or carob if you can't do chocolate


Instructions

  • Blend everything except the chips very well in a food processor. Mix in chips, and pour into a greased pan. Can be a 9-10 inch pie or springform pan. Cook at 350F for around 35-40 minutes. Let stand at least 10 minutes before removing from the pan.
